Citation: At approximately 0525 hrs, I observed the following conditions in the thigh deboning department while conducting review and observation component for the 01C02 procedure. On inspection of the thigh deboning belt and boards during department set-up after pre-operational sanitation had been completed, I found multiple (more than 100) small (approximately 1-5 mm) grey-black specks of flaky unidentified foreign material (UFM) over the product contact surfaces. I stopped employees from bringing any materials into the department and notified (Quality Assurance Group Leader) and (Production Scheduler). I asked maintenance to lock out the fans in the department due to the possible link of formation of UFMs on the belt and boards and the usage of the fans. I also informed that the department would need to be re-cleaned and re-sanitized. CSI monitored the cleaning and passed the department for use at approximately 0545 hrs. On inspection of the department at approximately 0715 hrs, I did not find any UFM on product contact surfaces. This is a noncompliance of 9 CFR 416.4(d).

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
