Citation: At approximately 15:00 hrs.I performed a 10 bird check for split tails as they exited the chiller.I observed that 4 out of the 10 birds still had either contained the kidneys and/or airsacculitis exudates.I immediately notified (2ad shift Supervisor) of the establishments failure to meet regulatory requirements and the requirements of the establishments airsacculitis salvage procedure (SOP Pros-028-1). I was instructed by my Supervisor (Dr.That all birds with split tails would have to be retained. I informed that all birds with split tails had to be retained for rework. I tagged a total of 7 combos of product.They were retained with US-Retain Tag No.B39801601,B39801602,B39801603,B39801604,B39801605,B39801606,andB39801607. The establishments Standard Operating Procedure Proc-028-1 states,"[redacted]" This is a failure to comply with Poultry Regulation-381.84 and the establishments Sop Proc-028-1.

Regulation:

381.84 Carcasses of poultry with evidence of extensive involvement of the air sacs with airsacculitis or those showing airsacculitis along with systemic changes shall be condemned. Less affected carcasses may be passed for food after complete removal and condemnation of all affected tissues including the exudate.
