Citation: On March 23rd, 2011 while walking through the establishment, I entered the chiller area from behind the grading rehang belt, there was a strong odor of rotted, spoiled meat. I notified (QA Tech) & (Packing Supervisor) of my findings, informed USDA that had issued a work order for this specific problem to Maintenance Mgr.). I tagged the room in the Evisceration department that has access to the area, upon entering that room I seen a welding tank lying on the floor, feathers and paper trash lying around, room tagged with USDA Rejected # B39-801624. I also have been finding pieces of labels, stickers, etc. throughout the establishment, leaving a glue residue on walls, plastic doorway strips etc. Above the West Evisceration house checker stand there is exposed insulation from the pipe wrap being damaged. This has been discussed in the weekly USDA/ Establishment meeting on 03/09/2011. Mold above the [redacted] exit belt on the ceiling tiles where the birds come out the dip tank, was informed about this last week by CSI. Establishment has received oral and written notification of this noncompliance.
416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
