Citation: On 04/14/2011, at approximately 0520 hours, while performing ISP task 04C04 pre chill at the west pre-chill station on the 10 bird randomly selected sample I found fecal material inside one of the birds. The fecal material was inside the tail area and down inside the bird on the inside of the breast on the left side of the keel bone. The fecal material was brown in color and about 1/4" in size. Two of the fecal smears inside the breast on the left of the keel bone were approximately 1" by 1/4" in size and brown in color, there were also two spots of fecal material on the left side of the keel bone that were approximately 1/4" in size and brown in color. I took regulatory control action of the west evisceration line and immediately notified the following individuals: Mr. (Evisceration Supervisor) and Ms. ( Quality Assurance Group leader) Mr. (SCSI) of my findings. I observed the Establishment implement immediate corrective actions. This is a failure of the establishment's HACCP plan for CCP 1B as well as ( CFR 381.65 (e) and 417.2(c)(4). Establishment management has received both written and oral notification of this noncompliance. Continued failure to meet regulatory requirements could result in additional enforcement action as described by 9 CFR 500.
381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
