Citation: While performing Pre-Operational Sanitation verification on 04/15/2011, I observed the following deficiencies: At 0412 hours, in area # 1 a greasy build up from the previous days operation on the blades of the west oil gland machine, at 0505 hours in thigh deboning I observed six (6) black UFM particles on the belt ranging in size from 1/8" to 1/2" in size. In white meat debone on the breast trim belt I observed numerous pieces of fat and particles of meat from the previous days production. In the cut-up department I observed meat, fat and black specks on the following belts, leg, thigh, and back belts. I notified Mr. , Mr. , and Ms. of the noncompliances and all were re-inspected, found acceptable, and released before operation. The establishment was notified that an NR would be issued for the sanitation deficiencies. Plant management has received oral and written notification of this noncompliance.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
