Citation: While performing pre-operational sanitation verification on 04/19/2011, I observed the following noncompliances : at 0450 hours in the dark meat debone department I observed in and on the top surface of the thigh skinning machine belt several small black specks and black greasy material in the webbing of the exit belt of the machine. On the trim belt of the deboning belt I observed black specks and several pieces of fat as well as particles of black UFM on the trimming boards on the deboning belt. I notified Mr. of the noncompliances and remained in the area until the noncompliances were corrected and re-inspected at which time I released the department to production. In the Tray Pack department and in Repack departments I observed particles of meat and fat on the belts, and in Weight Price I found a greasy build up under the exit end of the # 1 weight price belt. I notified Mr. and Ms.of these noncompliances and remained in the departments while they were cleaned, I then re-inspected and released the rejected equipment to production. The establishment was notified that an NR would be issued for the sanitation deficiencies which are a violation of 9 CFR 416.13(c) and 416.4(a) as well as the establishments SSOP. The establishments management has received oral and written notification of this noncompliance.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
