Citation: On 04/22/2011, at approximately 11:20 hours, while performing ISP task 04C04 Pre-Chill at the west pre-chill station on the 10 bird randomly selected sample I found fecal material in side one of the birds. The fecal material was inside the tail area. The fecal material was just inside the body cavity at the tail area, it was brown in color and approximately 3/8" by 1/8" in size. I took regulatory control action of the west evisceration line and immediately notified the following individuals: Mr. (Director of Quality Control) Mr. (Evisceration Supervisor), And (SPHV) of USDA of my findings. I observed the establishment implement immediate corrective actions. This is a failure of the establishments HACCP Plan for CCP 1B as well as (9 CFR 381.65(e) and 9 CFR 417.2 (c)(4). Establishment management has received both written and oral notification of this noncompliance. Continued failure to meet regulatory requirements could result in additional enforcement action as described by 9 CFR 500. Please refer to NR # 0030-2011 for preventive measures which were either not implemented or were ineffective.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
