Citation: At 0710 hours on 04/25/2011, I observed in the Tray Packing department a tube light laying on the top of a drip pan. I notified Mr. Avilla that the light should be removed, he informed me that the light had been laying in the drip pan for several weeks. At 0715 hours, I observed in the Tray Pack cooler, condensation on the ceiling in side the cooler door and above the units, I also observed condensation on the ceiling above the box track at the back end of the cooler. There were several places that the seam caulking was coming lose and hanging down. I showed Mr. and Mr. the condensation. This is a violation of 9 CFR 416.2(d) and 9 CFR 416.4 (d). I notified Mr. that an NR would be issued for these noncompliances. The establishment has been notified orally and in writing about these noncompliances. Failure to meet regulatory requirements could result in further administrative action as described in 9 CFR part 500.

Regulation:

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
