Citation: At approximately 0540 hours, FI . alerted me that he was finding black grease dripping on the legs and on the front of the birds. The line was stopped and Mr. (Evisceration Supervisor) was notified along with Mr. of the situation. The line was turned back on at about 0545 hours after Mr. took corrective action. At approximately 0820 hours, SCSI observed birds just prior to the spray cabinets with black grease on them, he took immediate regulatory control action by stopping both evisceration lines. SCSI notified Mr. (1st Processing Manager) and Mr. (Q.A. Director) of the noncompliance. Corrective actions were implemented by the establishment, and the line speeds were reduced to [redacted] birds per minute, SCSI released the evisceration lines to production. Mr. and Mr. were notified that a NR would be issued for this noncompliance. This is a violation of 9 CFR 416.4(d) and failure to meet regulatory requirements could result in further administrative action as described in 9 CFR part 500. A NR# 0017 dated 02/18/2011 was issued by PHV for grease on the chickens.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
