Violation: 416.13(c), 416.15(b), 416.4(d)

Citation: At approximately 1510 hours, while I was walking through the evisceration room FI alerted me that he found grease on the breast of some chickens on the east line. When I saw that I took a regulatory control action by stopping the line immediately and informed my supervisor Dr.and Mr. the evisceration supervisor. The establishment started the corrective actions by washing the contaminated birds and switching to the other line from east to the west line. This noncompliance consider a violation of 9 CFR 416.4{d} and failure to meet regulatory requirements could result in further administrative section as described in 9 CFR part 500. Similar NR # 0043 dated 05/05/2010 was issued because of presence of a grease on a line of the two lines in morning shift. this noncompliance also consider violation of 9 CFR 416.15{b} because of ineffective preventive measure. Past Similar NRs - Previous Ineffective Plant Actions: All spray nozzles in the line drying cabinet were removed and replaced with new nozzles NR: 43-2011 dated 5/5/2011

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.15(b) Corrective actions include procedures to ensure appropriate disposition of product(s) that may be contaminated, restore sanitary conditions, and prevent the recurrence of direct contamination or adulteration of product( s), including appropriate reevaluation and modification of the Sanitation SOP’s and the procedures specified therein or appropriate improvements in the execution of the Sanitation SOP’s or the procedures specified therein.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
