Citation: On 05/20/2011, at approximately 0545 hours, while touring the establishment, I entered the Breast debone/ Reepack/ weigh price department I observed condensation on white pipes directly above the reepack machine. Employees were placing product into the machine for the start up of operation. I notified Mr. of the condensation on the pipes above the machine, he informed me that he was removing the condensation from pipes at the other end of the line. I notified him that his employees were placing product into the machine, at which time Q. A. Technician took control of the machine and the product that had been loaded into it. I notified Mr. that an NR would be issued for this noncompliance. This is a violation of the establishments SOP and 9 CFR 416.2(d). The establishment has received both written and oral notification of this noncompliance. Please refer to NR # 0056 dated 05/18/2011 For preventive measures which were either ineffective or have not been implemented.


416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
