Citation: On 06/01/2011, at approximately 1019 hours, I observed several chicken on the evisceration lines just before the mist cabinets before entering the chill unit which had black greasy water dripping on them from the chains of both lines. I took immediate regulatory control action by stopping both evisceration lines and notified Mr. (Evisceration Supervisor) of the noncompliance. Noncompliance reports have been issued on 05/05/2011, 05/20/2011, and on05/26/2011 for the same noncompliances. The NR's which were issued on 05/20/2011 and 05/26/2011 the Establishment has not responded to in writing at this time. I informed SCSI Mr. who notified FLS Dr. of the repetitive noncompliance's and that the establishments failure to respond with an effective preventive measure for these noncompliance. SCSI spoke with Mr. (Director Of Quality Assurance ) and Mr. (First Processing Manager) at which time he informed them that failure to implement preventive measures for this noncompliance will result in regulatory control. This is a violation of 9 CFR 416.13(c) and 416.4(d). The establishment has been notified orally and in writing of this noncompliance. Failure to meet regulatory requirements could result in further administrative action as described in 9 CFR part 500.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
