Citation: At approximately 1610 while I and Dr. Fam were checking the plant records of the product produced on 6/24/2011 and verified by the the HACCP Coordinator on 06/27/11, We found out that the critical limit in CCP 5B was exceeded. This deviation was in one reading of necks' temperature that was [redacted] degree while other two readings were less than [redacted] degree. We checked the preshipment review for the corrective action was taken, but we did not find any corrective action was recorded.We started gathering information so we informed Mr., the second shift manager who contacted the HACCP Coordinator, Mr. and Mr. the QA Manager . After their coming to the plant we knew that the product was shipped. We asked them to track the product and put it on hold until assure the wholesomeness of the product. The establishment failed to comply with 9 CFR 417.3(c),417.4(a) (2) (iii), and 417.5(a) (3) this document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action as described in 9 CFR 500.

Regulation:

417.3(a)(1) The cause of the deviation is identified and eliminated;

417.3(a)(2) The CCP will be under control after the corrective action is taken;

417.3(a)(3) Measures to prevent recurrence are established; and

417.3(a)(4) No product that is injurious to health or otherwise adulterated as a result of the deviation enters commerce.
