Violation: 381.65(e), 417.2(c)(4)

Citation: On 06/29/2011, at approximately 0718 hours, while performing ISP code 04C04 (Pre-Chill) on the west evisceration line on one of the 10 bird randomly selected birds, I observed fecal material inside the tail area on the left side of the bird. The fecal material was dark brown in color and the two spots measured approximately 1/2" in size and were pasty in consistency. I took immediate regulatory control by stopping the west evisceration line and I notified Mr. ( First Processing Manager) and Ms. (Q.A Technician) of the noncompliance. I observed the establishment implement immediate corrective action. This is a failure of the establishments HACCP CCP # 1B as well as the failure of 9 CFR 381.65 (e) and 9 CFR 417.2(c)(4). I notified both Mr. (First Processing Manager) and Mr. (Quality Assurance Director) that a NR would be issued for this noncompliance. The establishment has received both oral and written notification of this noncompliance. Failure to meet regulatory requirements could result in additional administrative action as described in 9 CFR part 500. Please refer to NR# 0075-2011-17446 dated 06/16/2011 for preventive measures which were either not implemented or were ineffective.


381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
