Citation: At approximately 0645hours while performing preoperational sanitation, procedure O1BO2. In the breast deboning department, While inspecting the Giblet Machine, I found a heart lodged in the machine, I also noticed fat, and residue build up in the blades of the bag cutter. At this time I informed QA of my findings, and applied USDA Rejected tag NO.B39801564. Sanitation called me to reinspect the machine, and after doing so I released it for production. The establishment has been informed orally and in writing of this noncompliance. The establishment is in violation of 9CFR416.4(a) and 9CFR416.3(a). Failure to comply with regulatory requirements could result in further administrative action, as described in 9 CFR part 500.

Regulation:

416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
