Citation: At approximately 1235 hours, while on the evisceration floor, I observed a maintenance employee climbing the hang back rack in order to hang plastic near the [redacted] inspection station of the West Evisceration line. He stepped on the rack with both feet, and when he was finished, approximately 5 minutes later, he gathered his things and left the area. The racks were not sanitized or placed on hold by plant establishment, and the inspector's helper placed a bird on the rack a minute later. I notified (Eviseration Supervisor), who chose to condemn the bird in my presence. I observed as the racks were cleaned and sanitized, and then released the area. I also notified of this noncompliance. The establishment has been notified both orally and in writing of the noncompliance. Failure to meet regulatory requirements could result in additional administrative action as described in 9 CFR part 500. Past Similar NRs- Previous Ineffective Plant Actions: See resonse to NR#0073-2011. Preventative measures were ineffective.
416.15(a) Each official establishment shall take appropriate corrective action(s) when either the establishment or FSIS determines that the establishment’s Sanitation SOP’s or the procedures specified therein, or the implementation or maintenance of the Sanitation SOP’s, may have failed to prevent direct contamination or adulteration of product(s).
