Citation: At approximately 11:15 hours, while performing ISP task code 04C04 (pre-chill) on the west eviseration line, on one of the 10 birds randomly selected for the task, I found fecal material inside the bird, around the tail area. The fecal material was brown in color, it was about 1to 1 and a 1/2 inches in length, 1/2 inch wide, and of a pasty consistency. I took immediate regulatory control action by stopping the eviseration line, and notified Mr. (Plant Manager), Mr. (First Processing Manager), Mr. (Q.A. Manager), and ( QA Group Leader). I observed as the establishment implemented immediate corrective action.This is a failure of the establishment's HACCP#1B, as well as the failure of 9CFR381.65(e) and 9CFR417.2(c)(4). was notified that an NR would be issued for this noncompliance. The establishment has been notified both orally and in writing of the noncompliance. Failure to meet regulatory requirements could result in additional administrative action as described in 9CFR part 500.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
