Violation: 381.65(e), 417.2(c)(4), 417.3(a)(3)

Citation: at approximately 1550 hours, while performing 03J01 Zero Tolerance test at the east line, I found one of my ten randomly selected birds contaminated with fecal material. The fecal material was at the front part of breast muscle and on a piece of crop. It was green in color, pasty in consistency and approximately 1/2'' in size. The line was stopped immediately .I informed Mr. the QA manger and inform Dr., my immediate supervisor and Mr. , the Evisceration Supervisor. establishment implemented immediate corrective action. This deviation from critical limit at CCP 1-B will initiate a complete review of the establishment's HACCP records (03J02). This noncompliance is a failure to comply with the following regulations:9 CFR 417.2(c)(4) , 9 CFR381.65(e), and 9CFR 417.3(a)3 This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.9 CFR 500. Past Similar NRs - Previous Ineffective Plant Actions: The bird turner was properly adjusted and will be checked at start up and lot changes when bird weight changes in excess of 1 pound. NR: 95-2011 dated 7/12/2011

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;

417.3(a)(3) Measures to prevent recurrence are established;
