Citation: At approximately 1340 hour while touring the packing area, I observed an excessive amount of inedible product in the liver chiller At this time I notified Mr. (First processing Manager) of the noncompliance and applied USDA Tag No. B39801616 to the chiller, after showing him an excessive amount of lungs, spleens and a piece of intestine almost 8 inches in length. This is a violation of 9 CFR 381.65(b). When processing giblets, it must be done in a Good Commercial Practice Manor. I also informed Mr. that I would be issuing a NR. The establishment has been notified both verbally and in writing .Failure to comply with regulatory requirements could result in additional enforcement action as described in 9 C. F. R.500.
381.65(b) Poultry must be slaughtered in accordance with good commercial practices in a manner that will result in thorough bleeding of the carcasses and ensure that breathing has stopped prior to scalding. Blood from the killing operation must be confined to a relatively small area.
