Citation: On October 3, 2011 while I was walking by the grading belt where the carcasses are hung for the 2nd processing line at 1257 hours, I noticed black flakes of UFMs lying on the outside belt. I notified & of my findings, no carcasses were present on the outside belt, as I moved to the inside belt I also noticed black flakes of UFM on that belt. I immediately stopped the belt and informed & , all carcasses on the belt were retained, and the chiller belt was stopped. QC Techs & were notified, a QA Tag and a USDA Retained tag # B40-197833 were applied to the one (1) combo of carcasses for reprocessing. This noncompliance is a failure to comply with the following regulations 9 CFR 416.13(c), 416.4(a) & 416.4(d). This establishment has been notified both orally and in writing of this noncompliance. Failure to comply could result in further enforcement action as described in 9 CFR 500.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
