Citation: At approximately 1700 hours while performing my 01CO2 procedures at the tray pack area I noticed the SSOP has not been performed for today's production on second shift. I proceeded to check the remainder stations and noticed all stations have not had a daily check as of 1700 hours; the shift started at 1500hours. I immediately went to the QA office to see when the SSOP was last performed on day shift and many areas were over and past [redacted] which is requested by your SSOP plan. The plant SSOP plan states: [redacted] All are checking SSOP conditions [redacted] hours after start up but they are not checking area when they start at 1500 which would be [redacted] hours prior to the 1730 check. On 10/6/2011 "Dark Meat Deboning" completed a last SSOP check at 1526 hours and 2nd shift came in and did a SSOP at 1900 hours that is a 3.5 hour time frame from clean up to clean up time. "Breast Deboning" did a SSOP check at 1435 hours and a SSOP check was not performed until 1730 hours, "Tray Pack SSOP was 1440 hours and not another SSOP performed until 1730 hours. Failure to meet regulatory requirements could result in additional administrative action as described in 9CFR part 500.

Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
