Citation: At approximately 1240 hours, while I am giving the line inspectors brakes on the east line on the first station inspector notify me that there was dripping water from the ceiling on the same line at the last station I switch with the other inspector at the last station and I stopped the line and notify Mr. the evisceration supervisor. All product involve were condemned by establishment. At close examination, the water was dripping from the plastic hung earlier for a leak from the ceiling. The water from the plastic previous hung was dripping onto the poultry carcasses on the line. There was also water dripping from the overhead gray pipe onto the poultry carcasses on the line. After sanitary conditions were restored and the process was under control, I relinquished the regulatory control actions on the east evisceration line. There was approximately ten (10) minutes downtime with this noncompliance. The noncompliance's found involved direct product contamination. Establishment management has received oral and written communication concerning this noncompliance. This document serves as a written notification that continued failure to meet regulatory


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.15(b) Corrective actions include procedures to ensure appropriate disposition of product(s) that may be contaminated, restore sanitary conditions, and prevent the recurrence of direct contamination or adulteration of product( s), including appropriate reevaluation and modification of the Sanitation SOP’s and the procedures specified therein or appropriate improvements in the execution of the Sanitation SOP’s or the procedures specified therein.

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
