Citation: At approximately 1322 hours, while performing a procedure for Finished Product Standards (Processing/Trim Nonconformance Test) as the Pre-Chill Station on the East Evisceration Line, my test exceed the absolute limit of 30, the FPS for Processing Category on the test was not in the absolute limit. My test results subgroup total was 31, the processing nonconformance's were one (1) extraneous material . I immediately notified (Quality Assurance) of my findings. A review of the establishment history (Processing/Trim Nonconformance Tests) shows no previous five (5) CUSUM's exceeded the start number. Quality Assurance performed a retested for Finished Product Standard processing nonconformance's on the east evisceration line at 1328 hours for processing nonconformance's and failed the retest with a result with [redacted] exceeded the tolerance for processing category, and placed the east evisceration line in action mode. I informed (Eviscerating Supervisor) and Dr. (Acting IIC) of the results. Quality Assurance performed retests for processing nonconformance at the post chill station using prechill criteria, and passed at approximately 1354 hours, 1424 hours, 1456 hours, 1526 hours, and 1554 hours. Quality Assurance performed a retested for Finished Product Standard processing nonconformance's on the east evisceration line at 1344 hours for processing nonconformance's and failed the restest with a result of [redacted] with exceeded the tolerance for processing category. Quality Assurance peformed additional retests for Finished Product Standard processing nonconformance's on th east evisceration line at 1406 hours, 1422 hours, and 1447 hours for processing nonconformance's and failed the retests with results exceeded the tolerance for processing category. Quality Assurance performed retest for Finished Product Standard on the east evisceration line at 1452 hours, and 1456 hours, both test passed. Quality Assurance tagged 3 carcasses with red tags to mark the end of the failure mode at approximately 1458 hours at Pre-Chill Station. At approximately 1623 hours, the red tags came out of the chiller marking the end of the failure mode. This document serves as a written notification that your failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

381.76(b) Disposition: An inspector shall monitor the establishment’s application of the Finished Product Standards program and shall take corrective action including retaining product to prevent adulterated product from leaving the establishment when the inspector determines that the establishment has failed to apply the program as prescribed in paragraph (b)(3)(iv)(c) of this section).
