Citation: At approximately 1600 hours while performing my scheduled "Sanitation Performance Standards and Sanitary Dressing" I went to the "Breast De-Boning" department and found a heavy white plastic belt approximate five feet in length that carries the breast to another machine to be broken in five or six different places on that paticular belt. The previous night before Friday 01/21/12 "Breast De-Boning" was finishing up for the night I ask the Lead of breast De-Boning to please get the Maintenance so I can show him the broken belt. [newline]When maintenance came to breast de-boning I showed maintenance and they said they are replacing the entire belt as soon as the shift ended. [newline]Today is Friday 01/21/12 and the belt has not been replaced; it looks like maintenance did do some type of improvement on sections of the belt however, the belt still has 5 or 6 cracked sections.[newline]I immediately took regulatory control action and notified the lead whom called I placed reject tag No.B26898637 on the machine.[newline]The maintenance guys took immediate corrective actions and replaced the sections of broken belt.[newline]Continued failure to meet regulatory requirements can lead to enforcement actions as described in9CFR part 500.4.[newline]
416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
