Citation: At approximately 0550 hours, after plants pre-operational was performed, and department released for production in Breast Deboning Department, I performed a Operational SSOP Review and Observation, the following was observed: There were chicken fat particles of various sizes on the product contact surface on Breast Cone Lines, and framework from the previous day’s operation too numerous to count. There was grease buildup on the product contact surface of the Breast Cone Lines transfer belt inside guard rails from the previous day’s operation. There were also chicken fat particles of various sizes on the employee stands from the previous day’s operation too numerous to count. I immediately took a regulatory control action on Breast Cone Lines by stopping production. I informed (Quality Assurance Group Leader) and (Quality Assurance) of my observation. Upon further examination, there were chicken fat particles of various sizes on the product contact surface of the trim belt, and framework from the previous day’s operation. I rejected the Breast Cone Lines and Trim Table with US Rejected Tag B40 170376 for unsanitary condition. This noncompliance found was direct product contact surface. Production was stopped before product was involved. After sanitary conditions have been restored, the process was under control, I relinquished the regulatory control actions on Breast cone Lines, and Trim Table at approximately 0635 hours. Establishment management has received oral and written notification concerning this noncompliance. A check of the plant’s SSOP’s Form (Breast Deboning Department) shows no deficiencies for the above noncompliance. The department was released at 0515 hours for inspection. After reviewing the plant’s Operational Sanitation record (Breast Deboning) I found no entry documented prior to my observation of this noncompliance. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
