Citation: On March 13, 2012 while performing Preoperational SSOP Review and Observation inspection task the following noncompliances were found after plant management performed and found acceptable preoperational sanitation: The (new) thin slice machine had one piece of chicken muscle and fat 3" x 1" hanging down between the product contact belt and first roller. There was a second piece of chicken muscle and fat 2.5" x 1" hanging down between the product contact belt and second roller. In the breast deboning department the north cone line chain had approximately 5 pieces of fat 1/4" - 1" in diameter and the underside of the belt on the north line had approximately 15-20 pieces of fat 1/4" - 1" in diameter.The south line on the underside of the belt had approximately 5 pieces of fat 1/4" - 1/2". Most material was found towards the west end of both lines. (Sanitation Manager) was notified of all noncompliances. All deficiencies were found prior to the start of production and were immediately corrected - surfaces were cleaned and sanitized, no product was affected.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
