Citation: At approximately 1205 hours, while performing a procedure for Finished Product Standards (Processing/Trim Nonconformance) Test at the Pre-chill Station on the East Evisceration Line, my test exceed the absolute limit of 30, the FPS for Processing Category on the test was not in the absolute limit..  My test results subgroup total was 35, the processing nonconformance's were two (2) extraneous material < 1/16",  two (2) extraneous material > 1", two (2) lung-whole, one (1) lung > 1/4", one (1) Bursa of fabricius, three (3) Crop - partial - with mucosa, twelve (12) feathers and/or pinfeathers, and two (2) feathers >. I immediately notified (Quality Assurance) of my findings. A review of the establishment history (Processing/Trim Nonconformance tests) shows no previous five (5) CUSUM's exceeded the start number. Quality Assurance performed a retested for Finished Product Standard processing nonconformance's on the east evisceration line at 1220 hours for processing nonconformance's and failed the retest with a result of [redacted] with exceeded the tolerance of 25 for processing category, and placed the east evisceration line in action mode. I informed (Eviscerating Supervisor), (Quality Assurance Manager), and Dr. (IIC) of the results. Quality Assurance performed retests for processing nonconformance at the post chill station using prechill criteria, and passed at approximately 1245 hours, 1315 hours, 1345 hours, 1415 hours, and 1445 hours. After the establishment implemented corrective action, Quality Assurance performed a retested for Finished Product Standard processing nonconformance's on the east evisceration line at 1244 hours for processing nonconformance's and failed the retest with a result of [redacted] which exceeded the tolerance of  25 for processing category. Quality Assurance performed retest for Finished Product Standard processing nonconformance's on the east evisceration line at 1309 hours and passed. At approximately 1318 hours, Quailty Assurance performed retest for processing nonconformance's and failed the retest with results of [redacted] with exceeded the tolerance of 25 for processing category. Quality Assurance performed retests for Finished Product Standard on the east evisceration line at 1331 hours, and 1336 hours both tests passed. Quality Assurance tagged 3 carcasses with red tags to mark the end of the failure mode at approximately 1345 hours at Pre-Chill Station. At approximately 1451 hours, the red tags came out of the chiller marking the end of the failure mode. This document serves as a written notification that your failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.  [newline] 

Regulation:

381.76(b) Disposition: An inspector shall monitor the establishment’s application of the Finished Product Standards program and shall take corrective action including retaining product to prevent adulterated product from leaving the establishment when the inspector determines that the establishment has failed to apply the program as prescribed in paragraph (b)(3)(iv)(c) of this section).
