Citation: On 4/11/2012 at approximately 0920 while  walking through breast deboning the following noncompliances were observed: An employee was taking deboned front halves from a combo bin and packing them into boxes without liners at the end of the cone line.  These boxes were nested prior to use.  Deboned front halves are edible product.   These boxes are transferred along a nonproduct contact box track.  Nesting causes cross contamination to the inside of the boxes.  (Further Processing Superintendent) was notified of the noncompliance and QA tagged the pallet of already packed boxes.[newline]At repak machine 2 an employee was placing packaged product with applied labels into a tote in direct contact with open chicken breast pieces prior to emptying the packaged breasts into the tote. The labels are stored unsealed and are not considered product contact surface causing cross contamination.    (Further Processing Superintendent) was notified of the noncompliance and the tote of product was taken for reconditioning.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
