Citation: At approximately 0634 hours, while walking by the Salvage Parts Stations in the Evisceration Department, I observed condensation dripping from the ceiling and overhead light covers at the Salvage Parts Stations. At close examination, I observed condensation dripping from the overhead lights covers at three different locations onto poultry carcasses at stations 1 and 2. I immediately took a regulatory control action by stopping production at the Salvage Parts Stations. I rejected the Salvage Parts Stations with US Rejected Tag B40 197878 for unsanitary conditions. I retained approximately six poultry carcasses for reconditions. I informed (Evisceration Lead), and Mr. (1st Processing Superintdent) of my observation. After sanitary conditions were restored and the process was under control, I relinquished the regulatory control actions on the Salvage Parts Stations at 0651 hours. There was product involved at this time. After reviewing the plant's Operational Sanitation record (Evisceration Department), I found no entry documented prior to my observation of this noncompliance. Establishment management has received oral and written notification concerning this noncompliance.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
