Citation: At approximately 1345 while walking through the evisceration department the following noncompliances were found on the west line: About  5 feet after the final trim station there is a section of rusty rail approximately 1 foot long.  Approximately 2 feet after the IOBW there is a rusty section of rail approximately 1 foot long.  There was condensation on the rail that  was  running over the rusty section and dripping brown colored liquid onto a carcass.  The line was immediately stopped.  A plant employee wiped down the rail, the plant chose to condemn the carcass that had been dripped on and the plant stationed an employee at the rail to manage future condensation formation.  (VP Operations) was notified.


416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
