Citation: At approximately 0804 hours, while performing an operational SSOP review and observation procedure in the Breast Deboning Department, I observed a plant employee carrying a forty pound box of chicken breast to Breast Cone Line 2 (the box of chicken breast was dripping water from the bottom outside surface). The plant employee placed the box of chicken breast directed on the chicken breasts that were inside of the dumping table, then lifted the box of chicken breast, and dumped the chicken breasts from the box onto the chicken breast in the dumping table (The bottom outside surface of the product boxes are contaminated by the product box conveyor belts). I immediately took a regulatory control action, and informed (Breast Deboning Supervisor) to stop operation at this location. I rejected Breast line two dumping table with US Rejected Tag B39 801096. I retained the product involved with this noncompliance with US Retained Tag B39 801097. There were approximately fifty to sixty chicken breast involved with this noncompliance. Establishment management has received oral and written notification concerning this noncompliance.[newline] 


416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
