Citation: At approximately 0840 hours, I reviewed the establishment preventive measures for Noncompliance Record Number I003014061613N/1, dated 06/13/2012 on Maintenance Process Verification Checks (Form 210).  The establishment preventive measures states, “[redacted]”.  Upon examination, I found Production Superintendent’s initial on 6/15/12 on Maintenance Process Verification Checks Form 210.  I found no Production Superintendent’s initial on 6/16/12, and 6/18/12 on Maintenance Process Verification Checks Form 210 as stated in the establishment’s preventive measures to Noncompliance Record Number I003014061613 N/1, dated 06/13/2012.  I informed (Quality Assurance Supervisor) of my findings. Establishment management has received oral and written notification concerning this noncompliance.


417.3(c) All corrective actions taken in accordance with this section shall be documented in records that are subject to verification in accordance with 417.4(a)(2)(iii) and the recordkeeping requirements of 417.5 of this part.

417.4(a)(2)(iii) The review of records generated and maintained in accordance with 417.5(a)(3) of this part.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
