Citation: At approximately 0845 hours, I monitored the Pac Man Efficiency Check on the West Evisceration Line with a result of ten guts out of twenty guts not being removed by the Pac Man Machine. The reason why I performed this check to verify the establishment preventive measures to Noncompliance Record Number I003216032101N, dated 3-1-2012, on CCP #1B of the establishment HACCP Plan for Poultry Zero Tolerance Verification.  The preventive measure states, [redacted] ”.  Upon further examination, I requested one month of records of the Maintenance Process Verification Checks (Form 210). I was informed by the establishment that no records for verification of the Pac Man Efficiency Check were performed by maintenance since May 17, 2012 to June 13, 2012.  As of this date, the establishment is not performing this verification check of the Pac Man as stated in the above noncompliance record for the establishment’s preventive measure.  I informed (1st Processing Superintendent) of my findings. 

Regulation:

417.3(c) All corrective actions taken in accordance with this section shall be documented in records that are subject to verification in accordance with 417.4(a)(2)(iii) and the recordkeeping requirements of 417.5 of this part.

417.4(a)(2)(iii) The review of records generated and maintained in accordance with 417.5(a)(3) of this part.

417.5(a)(3) Records documenting the monitoring of CCP’s and their critical limits, including the recording of actual times, temperatures, or other quantifiable values, as prescribed in the establishment’s HACCP plan; the calibration of process-monitoring instruments; corrective actions, including all actions taken in response to a deviation; verification procedures and results; product code(s), product name or identity, or slaughter production lot. Each of these records shall include the date the record was made.
