Citation: On Tuesday, September 24, 2010 while reviewing the HACCP plan I reviewed Critical Control Point #6, for the Sanova Dip Tank. This CCP is [redacted] This monitoring is preformed prior to birds entering the dip tank, using a sample obtained from the solution pipeline after mixing, before it enters the dip tank. A titration was requested on September 24 at 11:45 am using a sample from the dip tank as the birds were going through the Sanova solution. The results of this titration were [redacted] ppm and [redacted] pH. The results of the normal daily monitoring check, using a sample from the pipeline prior to entry into the dip tank, at 06:34 was [redacted] ppm and [redacted] pH. This demonstrates that the values monitored by the critical control point are variable. Upon request for supporting documentation, plant management was unable to provide adequate support for the location of the monitoring check, as well as the frequency of monitoring. This is a failure to follow 9 CFR 417.5(a)(2). Establishment management has received oral and written communication regarding this noncompliance.
