Violation: 416.3(a), 416.4(a), 416.4(d)
Citation: At approximately 1800 hours I observed in the breast deboning area a large gray plastic combo of poultry breasts , about 2000 pounds. The out side of this combo has, rough surfaces ,irregular broken, rugged jaggy edges and deep cuts in the plastic. Also there is a brown build up of slime, dark grease and what looks like mold on the outside. On the inside at the bottom of the combo there is a drain that goes all around the bottom of the combo. Inside that drain is a brown build up and slimy to the touch that is from more then one days production and also has cuts in the plastic that can not be cleaned or sanitized. I informed the supervisor and QA tec. of my findings and applied USDA tag #B39133639 to the combo. A check of the plant records for that day and found no documentation for this event. This has been discussed with the plant at a previous meeting. This is in violation of CFR 416.1,416.3(a),416.4(a),and 416.4(d).
416.3(a) Equipment and utensils used for processing or otherwise handling edible product or ingredients must be of such material and construction to facilitate thorough cleaning and to ensure that their use will not cause the adulteration of product during processing, handling, or storage. Equipment and utensils must be maintained in sanitary condition so as not to adulterate product.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
