USDA Inspection Report: 13 Oct 2010

Code: 03J01
Violation: 381.65(e), 417.2(c)(4)

Citation: At approximately 1155 hrs., I observed the following noncompliance in the evisceration department. While performing ISP code 03J01 procedure for zero tolerance fecal check on ten randomly selected chicken carcasses at the pre-chill station, I observed fecal material in one of the test carcasses. I immediately initiated regulatory control action and stopped the line and informed evisceration supervisor of the noncompliance. The fecal material was located in the right inside of tail area, was dark greenish in color with a semi solid consistency approximately 1/8 inch. After the plant implemented corrective actions I relinquished regulatory control and started the line for production to resume. This is the last point of location where preventive measures could be exerted before entering the chill system. An 03J02 procedure was started and will be completed next shift. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
