Citation: At approximately 0715 hrs. I observed the following conditions in the box room. The plant had placed buckets in four locations and hung plastic at a fifth area where the ceiling was leaking water. One of the areas was over the box track. Another area was in close proximity to the box conveyor. Though the plant had placed corrective actions in place, do to the numerous leaks and past issues with leaks this is a noncompliance for repetitive leaks. Also at approximately 0830 hrs. while accompanied by Maintenance Manager I observed multiple areas above the chiller which had moldy caulking, I immediately pointed out the areas to Mr. I also notified of the moldy caulking along the south west wall and ceiling area above the chiller. At approximately 1030 hrs. I notified evisceration lead of condensation above the chiller and also at approximately 1230 hrs. I observed additional condensation above the chiller and notified of the noncompliance. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500. Past Similar NRs - Previous Ineffective Plant Actions: Preventive measures were either ineffective or not properly implemented to prevent leaks from reoccurring in the plant. 416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.
416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
