Citation: At approximately 0720 hrs. I observed the following conditions in the plant. In the evisceration department I observed a rusty heater condensate pipe above the salvage area located at the north end of the department. I immediately rejected the heater unit with U.S. tag #B39133628 and notified 1st Processing Manager of the noncompliance. Also in the CVP/Marination room I observed two leaks which had plastic covering on a light and a second location on a white pipe between the product track and the ice auger. I notified QA Manager of the leaks and also informed him that though the plant had placed plastic up for a corrective action a second leak has now occurred and preventive measures need to be implemented. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.2(b)(1) Establishment buildings, including their structures, rooms, and compartments must be of sound construction, be kept in good repair, and be of sufficient size to allow for processing, handling, and storage of product in a manner that does not result in product adulteration or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
