Violation: 416.13(c), 416.2(d), 416.4(d)

Citation: At approximately 0830 hrs. the following noncompliance was observed in the chiller area while accompanied by IIC Dr. and SCSI . On the ceiling above the chiller we observed multiple areas of condensation and water/leaks dripping from joining strips and screw heads into the chiller. I immediately initiated regulatory control action and notified the QA Manager Mr. to stop operations, and informed him and Complex Manager Mr. of the noncompliance. After corrective actions were implemented I relinquished regulatory control and had operations resume, approximate down time was a half hour. Previous processed product from the chiller was retained and reconditioned in addition to corrective actions being implemented. After a review of the plants SSOP records for the chiller area, plastic was hung for a previous leak that had occurred near the area of the other leaks of the noncompliance. Also at approximately 1415 hrs. I observed an employee in the packing area department pick a quarter cut leg off the floor and throw it into a combo bin of other legs without previously reconditioning the product. I immediately retained the combo bin of legs with U.S. tag #B38670137 and notified packing lead of the noncompliance. After a review of the plants SSOP records for the packing department no deficiencies were documented prior to my observation. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
