Citation: At approximately 0520 hrs., after the plants pre-operational sanitation and prior to the start of operations, I observed the following noncompliance while performing the 01B02 procedure for pre-operational sanitation. In the evisceration department I observed brownish colored water dripping from the ceiling along a joining strip at the north end of the department. The water was dripping on to the light and overhead structure into the liver/giblet harvest trough. I immediately notified of the noncompliance and maintenance supervisor I had also previously informed [redacted] of three other areas in the evisceration department were I observed leaks/condensation. After a review of the plants SSOP records for the evisceration department no deficiencies were documented for condensation/leaks and the department was released for USDA inspection at 0455 hrs. The liver/giblet harvest trough was a direct product contact surface. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
