Citation: At approximately 1330 hrs., I observed the following conditions in the evisceration department while performing the review and observation component for the 01C02 procedure. The inspectors hang back racks, used for chicken carcasses to be placed to be taken to reprocessing for further reconditioning, were full to capacity. The racks used by plant employees to transfer the chicken to the reprocessing area were also full and the line inspectors would stop the line until space was made available on their racks. At the reconditioning/reprocessing area all the shackles were full of chicken carcasses with multiple chicken on them resulting in additional cross contamination. At that time I immediately initiated regulatory control action and stopped the evisceration line and notified of the noncompliance. I also observed the following conditions in the evisceration department: three yellow condemn barrels full of condemned product over flowing on the floor, one behind the employee house checker at the mirror, one at the salvage area and one behind inspection station three. The evisceration floor drain was backed up, and viscera was piled up at the pac man area and on the floor. Regulatory control was upheld until the process was brought back into compliance and sanitary conditions were restored. After a review of the plants SSOP records for the evisceration department, no deficiencies were documented prior to my observations. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.
