Citation: Today 3/21/11 I observed the following noncompliance's while verifying the plants "plant improvement plan (PIP) list. In the chiller department I observed rust on the west chickway rail at the corner of the turn wheels. The PIP list stated a target date for 3/21/11, I notified and of the noncompliance. In addition to the rusty rail, the chain for the chickway line also needs oiled. And the black air line hoses for the scales have build up on them. At approximately 1030 hrs. I informed of the following observations in the plant: At the entrance of the evisceration department above the archway the metal flashing was loose and water was dripping down the wall from the picking room department. Also in the deboning department there was a gray junction box on the ceiling that was cracked and had loose caulking hanging off of it, and holes in the ceiling above the rib cage conveyor. In the evisceration department at 1400 hrs. there was a water pipe, used for hand wash near the hang back rack, that was leaking. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.2(b)(2) Walls, floors, and ceilings within establishments must be built of durable materials impervious to moisture and be cleaned and sanitized as necessary to prevent adulteration of product or the creation of insanitary conditions.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
