Citation: At approximately 0700 hrs., I observed the following noncompliance in the chiller/packing department while performing the review and observation component for the 01C02 procedure. On the direct product contact surface of the packing bins, located under the scales at the chickway line, I observed numerous black specks apparently from overhead rail. I immediately initiated regulatory control action and had the lead person stop the chickway line and notified him of the noncompliance. QA was not present in the department at the time of my observation. At that time the QA manager arrived in the department and retained all affected product to be reconditioned. Regulatory control was upheld until sanitary conditions were restored. Approximate down time was 20 minutes. After a review of the SSOP records for the chiller department, no deficiencies were documented prior to my observation. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
