Violation: 416.13(c), 416.4(a)

Citation: At approximately 0840 hrs. I observed the following noncompliance in the cooler while performing the review and observation component for the 01C02 procedure. I observed chicken pieces, fat, product residue build up, and blood clots on the inside and outside of multiple blue and brown totes and lids used for (WIP) product. I immedately retained all blue and brown totes with U.S. tag #B39133618 and notified the QA manager of the noncompliance. A total of three skids were retained, segregated and per QA manager request, retained them with QA tag for USDA tag integrity during clean up of all affected totes. All totes were a direct product contact surface used for (WIP) product. After a reveiw of the plants SSOP records no deficiencies were documented prior to my observation. This document serves as a written notification that failure to comply with regulatory requirements could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
