Citation: On Monday, 05-02-2011, 0702 hours, while leaving the Cut-Up/Thigh Deboning Department's going through the cafeteria, the following was observed; approximately seven (7) plant employees sitting down at the tables in the cafeteria wearing hair nets, beard nets, smocks, aprons, white sleeves and gloves. I immediately informed (Quality Assurance Manager) of my observation. All of the seven (7) plant employees work in the Cut-Up/Thigh Deboning Departments. A review of the establishment Good Manufacturing Practices (GMP) Plan under General Employee Hygiene, states as following, [redacted] The floor and tables in the cafeteria was dirty as this time. Establishment management has received oral and written communication concerning this noncompliance. This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.5(a) All persons working in contact with product, food-contact surfaces, and product-packaging materials must adhere to hygienic practices while on duty to prevent adulteration of product and the creation of insanitary conditions.
