Violation: 416.13(c), 416.4(a), 416.4(b)

Citation: On Monday 16, 2011 when performing ISP task 01B02, I observed the following noncompliances: In area #1 IU # 3 Stunner I observed dried blood , feathers and dried fecal material on the ceiling above the stunner and adjacent areas. In IU #5 there was a build up on the track in the bleeding tunnel and at IU # 17 steam/ recirculation pipes there was a build up on the support beam. I notified Mr. of the above noncompliances and they were cleaned and re-inspected and released. In the chilling area IU #1 I observed fat feathers and a build up on the shackles, and the bird selectors, I tagged the Chic way line with U.S. reject tag # B39133524, and notified Mr. of the noncompliance at 0515 hours. I also observed black grease on the exit belt of the chiller and several small black specks in the dump tanks at the pre-chill station. In evisceration at the vent machine guide bar I observed black friction grease, I notified Mr. and he had the noncompliances cleaned. At 0550 hours Mr. requested that the chic way line be re-inspected, I found the items to be acceptable and released them to production. I notified Mr. and Mr. that a NR would be issued for these noncompliances. These noncompliances are a violation of 9 CFR 416.13(c), 416.4(a), 416.4(b) as well as the establishments SSOP program. The establishments management has received both oral and written notification of these noncompliances. Failure to comply with regulatory requirements could result in additional enforcement action as described in 9 CFR part 500. Please refer to NR# 0032 for previous preventive action; which were either ineffective or not implemented.

Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
