Citation: At approximately 1340 hrs, while performing an unscheduled 06D01 procedure in the eviseration department, I noted condensation on the overhead structures near the USDA stands. A white pipe and some stainless steel structures had heavily beaded condensation directly over a walkway and the production line. In addition, the section of pipe over the floor was dripping steadily. Birds taken off line for reprocessing and salvage pass under this section of pipe, and therefore product contamination was imminent if the situation was not corrected. I notified and (First Processing Manager) of the non-compliance and failure to comply with 416.2(d). I obsevered as the condensation was removed and sanitary conditions were restored. Establishment management has received oral and written communication concerning this noncompliance. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action.
Regulation:
416.2(d) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
