Citation: On Thursday, 07-07-2011, at approximately 1037 hours, while performing a review and observation component for the 01C02 procedure in the CVP/Marination Department's; I observed a plant employee placing an empty forty pound box on top of a box of whole poultry carcasses. At close examination, the bottom surface of the empty forty pound box was wet and dripping water on the poultry carcasses in the bottom box of poultry carcasses. I also observed the bottom surface of the empty box touching the poultry carcasses in the bottom box of poultry carcasses. I immediately retained the box of poultry carcasses (ten poultry carcasses) with US Retained Tag B39 133546 for cross contamination. I informed (Quality Assurance Manager) of my observation. I reviewed the plant's Operational Sanitation record and GMP Monitor's record for CVP/Marination Department and found no entries documented prior to my observation of this noncompliance. The product involve was taken to the product wash station for recondition. Establishment management has received oral and written communication concerning this noncompliance. A review of the establishment SSOP Plan under Operational Sanitation Procedure, ."This document serves as a written notification that your failure to comply with regulatory requirement could result in additional enforcement action described in 9 CFR part 500.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
