Citation: At approximately 0715 hours, while performing pre-operational sanitation in the Breast Deboning Department, I observed a plant employee taking poultry split breasts from the box stand and placing them back into the breast catching bin. I immediately took a regulatory control action by stopping production to the breast catching bin. I rejected the breast catching bin with US Rejected Tag B39 133561 for cross contamination. I informed (Quality Assurance Manager) of my observation. (The product boxes that come down the box chute's are contaminated on the bottom outside surface). At approximately 0717 hours, while retaining the cross contamination product with US Retained Tag B 39 133563, I observe poultry front halves dropping into the cross contamination breast catching bin from the Cut-Up Department. I immediately informed (Packing Lead) and to stop production to the breast caching bin again. There was approximately three hundred (300) pound of product retained for recondition. After sanitary conditions have been restored and preventive measures were proposed, I relinquished the regulatory control action on the breast catching bin at approximately 0728 hours. There was thirteen (13) minutes downtime involves with this noncompliance. There was product boxes on the box stand at this time. Establishment management has received oral and written communication concerning this noncompliance. After reviewing the plant's Operational Sanitation record and GMP Monitor's record (Packing Department) shows no entries documented prior to my observation of this noncompliance. " [redacted]." 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
