Citation: At approximately 0851 hours, while performing an unscheduled review and observation component for the 01C02 procedure in the Breast Deboning Department, I observed water dripping from a gray electric box onto the chicken wings and wing transfer conveyor in the Breast Deboning Department. I immediately took a regulatory control action by stopping production in the Breast Deboning Department. I rejected the wing transfer conveyor with US Rejected Tag B39 133591 for unsanitary condition. I retained three boxes of chicken wings with US Retained Tag B39 133590. I informed (Second Processing Manager) and (Quality Assurance) of my observation. There was approximately one hundred and twenty (120) pound of chicken wings retained for recondition. The water was dripping approximately every thirty (30) second from the gray electric box onto the product and conveyor. After sanitary conditions have been restored and preventive measures were proposed, I relinquished the regulatory control action on the wing transfer conveyor 0907 hours. There was sixteen (16) minutes downtime involves with this noncompliance. There was product involved with this noncompliance. Establishment management has received oral and written communication concerning this noncompliance. After reviewing the plant's Operational Sanitation record and GMP Monitor's record (Breast Deboning Department) shows no entries documented prior to my observation of this noncompliance. 416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.2(b) Ventilation adequate to control odors, vapors, and condensation to the extent necessary to prevent adulteration of product and the creation of insanitary conditions must be provided.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
